Coffee and white chocolate seem like opposites: one intense, bitter, and bold; the other soft, sweet, and enveloping. Yet it’s exactly in this contrast that something unexpectedly harmonious is born.

The dough is created in the Cardenà workshop with the sourdough starter we’ve nurtured for 40 years, combined with selected butter, honey, malt, and fresh grade 1A egg yolks. The coffee runs through the dough with its deep, toasted note, while the 21% white chocolate brings a milky, velvety sweetness that softens its character without overpowering it.

The glaze is all about white chocolate — smooth, glossy, and topped with white chocolate curls, which add texture and make every Colomba recognizable at first glance. An aesthetic detail that also signals artisanal care.
