Salted Caramel and Pistachio Colomba

Artisanal Colomba with salted caramel and pistachio chocolate, glazed with caramel chocolate and pistachio sprinkles. Natural sourdough yeast, fresh grade 1A egg yolks. A surprising balance of sweet, salty, and fruity.

The salted caramel is one of those pairings that seems daring until you taste it. The salt doesn't mask the sweetness: it enhances it, defines it, gives it depth. And it's precisely this deliberate and refined contrast that characterizes our colomba.

The dough is made in the CardenĂ  workshop with the natural sourdough starter we've been cultivating for 40 years, to which we add selected butter, honey, malt and fresh 1A egg yolks. The 14% salted caramel runs through the dough with its enveloping and bold note, while the pistachio chocolate brings a fruity and toasted presence that balances and completes the aromatic profile.

The glaze is an explosive mix: caramel chocolate and pistachio sprinkles, for a rich coating—the perfect finish for a leavened treat designed down to the last detail.
