Peach and chocolate seem like worlds apart. Yet, a slow-leavened dough and the right balance of ingredients are all it takes to discover they’ve always belonged together.

This colomba comes from a precise idea: bringing to the Easter tradition a pairing that surprises at first bite and convinces at the second. The dough is the same we’ve
been cultivating for 40 years in the Cardenà workshop — natural sourdough starter, selected butter, honey, malt and fresh category 1A egg yolks — enriched with pieces of candied peach and 25.8% milk chocolate, a percentage that guarantees real chocolate presence in every slice, not just a hint of flavor. The gianduia glaze with milk chocolate chunks completes the aromatic profile with an enveloping note that balances the fruity freshness of the peach.

The result is a Colomba that respects tradition in its structure — the slow leavening, the softness of the dough, the fragrance of the glaze — and reinterprets it in flavor, with the same artisanal care that Maria and Matteo have put into every Cardenà creation since 1980.
