Three chocolates, three characters, one single dough. It’s not a matter of abundance — it’s a matter of balance. The 39.1% dark chocolate sets the character:
intense, slightly bitter, bold. The 25.8% milk chocolate brings softness and a rounded sweetness that softens the contrasts. The 22.6% white chocolate completes the circle with a milky, velvety note that ties everything together.

The dough is created in the Cardenà bakery with the natural sourdough starter we’ve been nurturing for 40 years, combined with selected butter, honey, malt, and fresh Grade 1A egg yolks. A base that knows its craft and carries the chocolate without overpowering it.

The dark chocolate glaze completes the aromatic profile with its intense, glossy note, enriched by mixed chunks — dark, milk, and white — which bring the three stars of the dough to the surface and make every Colomba visually unmistakable.
